Lusty Lure
(with Spawning Jus)

Ingredients
2 8 oz salmon filets (1” thick)
Rub Jus
2 tbsp olive oil
1 1/2 cup Zinfandel
2 tbsp brown sugar
1 cup sugar
¼ tsp dry mustard
2 oz. bittersweet chocolate, chopped
Dash of ground cinnamon
2 tbsp butter
1 tsp sweet paprika
½ tsp cocoa powder
2 tsp ground cumin
½ tsp pepper
Preparation
Bittersweet Chocolate Jus
Make a reduction by combining wine and sugar. Slowly simmer until liquid is
reduced by 1/3 Have a sip of wine Remove from heat and stir in chocolate until
completely blended. Set aside and keep warm. Just before serving, stir in butter.
Heat grill on Medium High. (You can broil if a grill is not available). Whisk together
dry rub ingredients. Rub salmon on all sides with olive oil. Pat with dry rub mixture
Have a sip of wine Grill salmon for approximately 3-4 minutes per side, depending
on thickness. Do not overcook. When plating, pour a pool of the jus and place salmon
atop the pool.
