Ingredients

1 lemon
1/2 oz premium gin
1 1/2 tbsp fresh lemon juice
1 sugar cube (2 if you prefer sweeter)
1/4 cup of Champagne (Brut) or sparkling wine – chilled
4 dashes Peychaud’s cocktail bitters
Glass: Short-stemmed Goblet

Preparation

 Use a rind peeler to cut a 6” long strand of lemon rind for each cocktail. Gently twist
into a curly strand and set aside.  Drop 1 sugar cube into each glass (2 if you prefer
sweeter) and splash 4 dashes of Peychaud’s bitters onto cubes.
 In a separate glass squeeze 1 ½ Tbsp. of lemon juice and add 1 ½ oz. premium gin
(chilled). Then add ¼ cup of Champagne or a sparkling wine of the Brut variety. Stir
contents then pour into glass.  Stir gently and crush the sugar cube to your desired
sweetness. Garnish with lemon rind.
