Quickie Croissant
(Perfect for breakfast in bed)

Ingredients
6 slices smoked salmon
2 fresh croissants
2 slices havarti cheese
1 fresh tomato
2 thin slices red onion
2 tsp mayonnaise
1 tsp dijon mustard
4 tbsp whipped cream cheese
1 tsp capers
1/4 tsp Old Bay seasoning
8 large basil leaves
Preparation
Slice croissant in half lengthwise. Place 1 slice havarti cheese on one side. Place
under broiler until cheese starts to melt. Watch closely as the croissant will burn
quickly. Place on serving dish. In a bowl, stir mayonnaise, dijon, creme cheese, and
Old Bay together. Spread cream cheese mixture on bare side. Add sliced onion, sliced
tomatoes, and top with salmon. Spoon capers and cut for easier handling.
