Turgid Tower

Ingredients
8 oz. ahi grade tuna
1 tsp honey
4 oz fresh crab
1 tbsp olive oil
2 tsp. chopped scallions
1 tsp chopped green onion
3 ripe avocados
1 tbsp lemon juice
1 ripe mango
2 tbsp soy sauce
1 tbsp lime juice
2 tbsp sesame oil
1 tsp mayonnaise
1 1/2 tbsp rice vinegar
Toasted sesame seeds for garnish
Lightly toasted crostinis
Dressing
Combine lemon juice, lime juice, soy sauce, sesame oil, honey, rice wine vinegar, and
mayo in a bowl and whisk to create emulsion. Set aside.
Preparation
Set one avocado aside. Cut Ahi into 1/4 inch cubes and toss with 1 tbsp lemon juice
and 2 tbsp sesame oil, salt and pepper. Cut avocados into 1/4” cubes and gently toss
with scant rice wine vinegar, salt and pepper. Chop mangos and set aside. Stack in a
clean 6 oz tomato can with both ends removed; Save one end to use for pushing. Ahi on
bottom, avocado, crab, and mango. Gently compress mixture in can. Chill up to 1
hour Have a sip of wine and enjoy your partner To remove, gently push the
“turgid tower” through the can onto a clean plate. Slice the narrow end of the avocado
to form the “crown” of your tower (think phallic). Drizzle dressing over tower for
visual effect and flavor. Optional: Compliment with your favorite caviar. Serve
with toasted crostini. Voila! Edible erection.
