Lusty Lure

(with Spawning Jus)lustylure

2 8 oz salmon filets (1” thick)
Rub Jus
2 tbsp olive oil
1 1/2 cup Zinfandel
2 tbsp brown sugar
1 cup sugar
¼ tsp dry mustard
2 oz. bittersweet chocolate, chopped
Dash of ground cinnamon
2 tbsp butter
1 tsp sweet paprika
½ tsp cocoa powder
2 tsp ground cumin
½ tsp pepper


Bittersweet Chocolate Jus
 Make a reduction by combining wine and sugar. Slowly simmer until liquid is
reduced by 1/3  Have a sip of wine  Remove from heat and stir in chocolate until
completely blended.  Set aside and keep warm. Just before serving, stir in butter.
 Heat grill on Medium High. (You can broil if a grill is not available). Whisk together
dry rub ingredients. Rub salmon on all sides with olive oil. Pat with dry rub mixture 
Have a sip of wine  Grill salmon for approximately 3-4 minutes per side, depending
on thickness. Do not overcook.  When plating, pour a pool of the jus and place salmon
atop the pool.
