We have fun flirty aprons to help set the mood and create the magic in your own kitchen. We will be posting our favorite recipes that will coincide with celebrations that happen the whole year through. Each event will have a corresponding apron!!! We’re starting off by celebrating Cinco de Mayo. The recipes are simple yet they will surely entice your partner… and your palate. We hope you enjoy planning your Cinco de Mayo celebration with us!!!
Hold on to your sombreros….this Gazpacho will cool down the hottest mouth… With only the freshest vegetables and a hint of tequila (or Vodka if you prefer) will sizzle your palate. Make this ahead and start your night with this “Gotcha” dish.
- 2 lbs firm ripe tomatoes
- 1 cucumber
- 1 red, yellow and orange bell pepper
- 1 red onion
- 2 stalks celery
- 1 carrot diced
- 3 cloves minced garlic
- 1 jalapeno seeded
- 2 cups crushed tomatoes
- ¼ cup red wine vinegar
- ½ cup tequila
- ¼ cup olive oil
- 1 tsp hot sauce
- ¼ tsp pepper flakes
- Juice of 1 lemon and lime
- Fresh cilantro
- 1 avocado for garnish
- Optional garnish (Grilled shrimp, bacon and avocado ball skewered and set across top of shot glass)
Roughly chop ingredients into ½ in pieces. Pulse the vegetables in a food processor individually. Pulse to desired consistency. ( I prefer a rougher chop ) After each vegetable is processed, combine in a bowl. Add garlic, juice, vinegar, tequila, Olive oil, pepper flakes and hot sauce. Salt and pepper to taste.
Refrigerate for a minimum of 3 hours.
Pour into shot glasses and garnish.
A Garlic Lovers Fantasy
This is actually 3 recipes….Scallop taco that include a delicious twist on coleslaw and my amazing garlic sauce. You can use this garlic sauce on so many different things… It’s now a staple in our kitchen.
Makes 4 or 6 Appeteasers!!!
Start with a Back seat Margarita (listed below this recipe)
- 6-8 large scallops
- 4 large corn tortillas or 8 small.
- 1 /2 cup garlic parmesan sauce (recipe follows)
- 1 cup “Gracies slaw (recipe follows)
- ½ cup chopped tomatoes
- 1 cup extra sharp shredded cheddar
OK this recipe gets me so excited because it is overwhelming in flavor. You can prepare these with either full sized tortillas or open faced on a small tortilla and serve as an appetizer. Ohhhh that garlic sauce!
Gracie’s slaw:
- 2 cup shredded multicolored cabbage
- ¼ cup cranberries
- 2 tbsp fresh Orange juice
- ½ tsp garlic parmesan sauce
- ¼ cup mayonnaise
- Salt and pepper to taste
- Toss and refrigerate for 1 hour
- Garlic parmesan sauce:
- ¼ cup fresh lemon juice
- 5 cloves fresh garlic
- ¾ cup freshly grated parmesan cheese
- ½ cup olive oil
- 1 ½ tsp coarsely ground pepper
Pulse together slaw ingredients in food processor for 1-2 minutes.Add more oil for more viscosity.
Scallops:
Heat 2 tbsp butter in skillet. Add 1 tbsp garlic sauce and saute.
Rinse and wipe dry the scallops. Place in garlic butter and pan sear for 1 ½ minute on each side. They should deliver a nice brown crust
Remove and cut into quarters.
To assemble the scallops, Heat tortillas in pan and top with cheese. Allowing the cheese to melt.
Place slaw and other ingredients and the take that bite…
If you’d like to add the crème sauce just combine 2 tsp lemon juice, 1/2 cup mayonnaise and 1 TBSP THE GARLIC sauce.
- 1 ½ oz Tequilla Blanco
- ½ oz Cointreau
- ½ oz Grand Marnier liqueur (for floating)
- 1 oz Fresh lime juice
- 1 oz liquid Margarita Mix
Garnishes:
- 1 Slice Orange
- 1 Slice lime
- 1 Sprig mint
- Margarita Salt
Preparation:
Salt the rim of a margarita glass and fill with small ice cubes.
Fill a cocktail shaker with ice. Add ingredients and shake 12 times. Strain the elixir and pour into glass. Float the Grand Marnier into the glass and garnish!
